currently snacking on: box brownies

Shall we get a better look at those brownies? Yes, why don't we do that.

First my sister drizzled extra chocolate on them. Then she undercooked them. They were perfect. They were better than perfect for breakfast.

currently enjoying: campfire dinner at the beach

sisters. beach.

About a month ago my sister, friend and I camped out on the Oregon coast. Going to sleep to the sound of ocean waves was amazing (and by far my favorite part of the trip). Deborah is a gourmet and she and Bethany prepared a campfire feast!

Salmon wrapped in roasted veggies and potatoes over the fire

Hungry girls!

Let the feast begin

What's for dessert? Peanut butter and chocolate stuffed roasted banana. It's true.

currently enjoying: almond toast & coffee

My friend, Bethany, and I enjoyed a few hours at Woodlawn Coffee & Pastry in Portland a few weeks ago. Mmm, I'm not a coffee drinker, but it's a must at a cafe like this. The toast was actually Bethany's, but I enjoyed a few bites. :) And the best part? The outdoor space (pictured below), perfect for friends who are in graduate school (ahm, Bethany).

My only critique? No fruit. Oh Oregon, you are not Colorado (even though you have fresh fruit coming out of your ears ... hm, maybe that's why :).

ham & brie crepe

Ok, funny story behind these crepes. This is the closest I've ever been to having to wash dishes for a meal. My co-worker and I found this little cafe our first night in Montreal and were looking forward to these crepes for 3 days. Over the course of those 3 days we realize that no one was taking our American Express cards and our cash was running out. We were stumped again when our ATM cards didn't work that morning. I think we were tired and hungry because we were half way through breakfast when reality hit the bottom of our stomached along with our cappuccinos. We had $20 (American) and $10 (Canadian) left. Based on the outlandish price of food we had experienced thus far, we realized there was no way we had enough cash. Meanwhile, Wells Fargo was having technical difficulties and wouldn't take my "turn my ATM card on!" plea.

Uhm. "Do you think if we only eat half then we can pay for half?" Yep. We were those people who get stuck in another country with no way to pay for the breakfast we just finished. So we started sweating and I started praying that my credit card would work even if my ATM didn't. That was the longest time it's ever taken for a credit card machine to approve ... but it approved. Whew.

These crepes suddenly tasted extra amazing.

If you're ever in Montreal, please go get a ham and brie crepe ... just bring enough cash!

currently enjoying: strawberry stuffed s'mores

That's right! My big sis is a gourmet when it comes to camping food and that second image is a chocolate and strawberry stuffed mallow. We also tried raspberries and peanut butter (not together!). Mmmm. I love s'mores.

peach cobbler & oatmeal cookie crunch

My mom and I had a wonderful weekend get-away together (more photos later). But I think my favorite part was the quick hike we took in Glenwood Springs and the pints of Ben & Jerry's we ate at the top.

1pt/person. :)

FACT: We hiked to Doc. Holiday's grave ... only to find out he was an outlaw. As in the bad guy!?!

Home-made chocolate muffin

Last week my friend, Bethany, and I found ourselves in Washington when we were supposed to be at Fort Stevens in Oregon. Washington really needs to get a handle on those "Welcome to Washington" signs. ;) These home-made chocolate muffins were just the pick-me-up we needed when we realized we were in the wrong state. Yum!

Baked by the Grand View Bed & Breakfast where we stayed in Astoria, Oregon.
